Jambalaya….Perfect Cold Weather Nourishment

Food: Basic, Sourdough Bread and Comfort

Oh Lordy! Warm bread, cold bread, sourdough bread and butter and soup/stew/beans/by itself!

Warmth and comfort especially as colder temps take over the Northern tier….but even in the Southern tier’s Summer time, Sourdough bread hits the spot! Yummmy Starch!


Kalyn’s Pot Roast (That Time of Year)


As the weather turns slightly cooler in the Pacific N.W. that hearty comfort food comes to mind…meat!…so, a Pot Roast sounds quite fortifying! Chili & Snowflakes

As you may know, if you come by here now and then, I rarely promote food, bebidas or music. I have even fallen away from the curvaceous promotions of old. But, last night I was led to believe an Arctic Express might be bearing down upon my back yard, so I developed a primal appetite for meat and decided to throw in a few legumes. I browned up some ground chuck, boiled up some pinto, lentil, black, navy and kidney beans in no particular proportions (yes purest, I added beans to the mix). Added to the mix was cumin, dried chipotle, lots of black pepper and a touch of tomato paste. Mixed all together, it was perfect this morning as I watched the snow swirl and blow. Meat!

Of course, the snow has stopped for now (I am one of those rare Portlandian’s that love snow and don’t panic when a half inch accumulates). An aside, do the news crews that standing in Troutdale at the mouth of the Gorge or at Sylvan in the West Hills feels like the blithering fools they appear to be?  


Slumgullion Stew (Cold Weather Comfort)

My dad was big into stews, beans, earth foods. His staples were not out of a box or bag. Born into the poor hollers of West Virginia, he only knew the simplest of foods and as it were the healthiest of foods. Slumgullion variations and good bread (to be honest sometimes that good bread was simply Wonder Bread and lots of butter) were offered up.

1 1/2 # Beef Stew Meat, cubed
1 large onion, chopped
3-5 medium carrots, sliced
3 red potatoes, diced
1 bell pepper, chopped (optional)
1 can black eyed peas(optional)
1 can tomatoes, chopped
4-6 cups water
1 tsp. thyme
salt and pepper to taste

Brown the meat over high heat with 1-2 TB olive oil in a dutch oven. Saute onion with meat. Add carrots, potatoes, tomatoes, and water and simmer for at least 1-2 hours or until the vegetables are tender. Add seasonings to taste. You can add leftover veggies such as cabbage, corn, green beans, etc.

Thicken the broth with flour. Add 1/2 cup macaroni in last 1/2 hour cooking, if desired. Adjust seasonings if needed. If you are using stove top, be careful to not overcook. If you are preparing this dish in a dutch oven over coals, be careful that the heat isn’t too hot. Enjoy!    (From The Urban Homemaker)
